Fresh, quick antipasti from the baking sheet


Hello Foodpunk! Today we brought you a recipe for simply delicious antipasti from the oven. A little Dolce Vita for everyday life, so to speak.

"Antipasto" – or in the majority "Antipasti" is Italian (who would have thought it?) And literally means "before the meal". So much like "starter". In Italy you get many small meals as an appetizer as an antipasti. The career of Caprese – tomatoes with mozzarella – started, for example, as an "antipasto".

Here in Germany, we usually do not take the starters very precisely in everyday life. Here Antipasto is more of a collective term for all kinds of dishes that can also be eaten very well as a main course. But it doesn't matter. Our creation is so delicious that it is eaten quickly.

To conclude our little digression: Basically this dish should be called "verdure grigliate" with chicken breast. So much like "grilled" vegetables. However, we found that "baking tray antipasti" sounds better. And so you know immediately what to expect in this delicious ketogenic recipe.

  1. Preheat the oven to 200 ° C with circulating air and cover a baking sheet with baking paper.

  2. Wash the zucchini, cut in half lengthways and cut into rings.

  3. Peel and quarter the shallot

  4. Clean and quarter the mushrooms.

  5. Put the vegetables in a bowl.

  6. Puree the garlic, balsamic vinegar, olive oil, rosemary and a little salt.

  7. Rub the chicken breast with a tablespoon of this mixture. Place these on the baking sheet.

  8. Mix the rest of the mixture into the vegetables. Also place the vegetables on the baking sheet.

  9. Bake in the preheated oven for 20 minutes. Then turn the temperature back down to 100 ° C and let it steep for another 10 minutes.

  10. Place the vegetables and chicken on a plate and serve with the olives.
