Without the addition of table sugar and full of healthy fats from nuts and coconut oil, the crunchy muesli is perfect for a delicious, ketogenic breakfast. It goes perfectly with yoghurt as a topping. It also tastes delicious with coconut milk. You can also enjoy the heavenly crunchy nut muesli with sweet raspberries.

We use erythritol for the muesli, which keeps insulin output low. So there are no nasty cravings. Accordingly, the meal keeps you comfortably full.

  1. Preheat the oven to 150 ° C top and bottom heat (130 ° C convection, gas level 1). Line a baking sheet with parchment paper.

  2. Roughly chop the nuts. Mix the nuts, coconut flakes and erythritol together.

  3. Melt the coconut oil over low heat. Put the oil on the baking sheet and spread the coconut flakes and nut mixture on it to a thickness of 1 centimeter.

  4. Place the baking sheet in the oven and let the mixture brown for 30 to 45 minutes, turning every 10 minutes with a wooden spoon. At the end of the baking time, check every 3 to 5 minutes whether the muesli is ready. Take out the baking sheet.

  5. Let the muesli cool down on the baking sheet. So that the erythritol does not settle on the ground, turn the muesli every 10 minutes for 30 minutes.

  6. Let it cool down completely. Break into pieces when hardened and store in a large mason jar.

  7. TIP:
    Every oven heats differently. That's why you should keep a close eye on the nuts.
